Arresting fermentationA technique of preserving RESIDUAL SUGAR in wines by stopping FERMENTATION. There are several methods to arrest fermentation including chilling the wine to the point where YEASTS become inactive and using a CENTRIFUGE to remove the yeast cells prior to completing fermentation.
